Rice pudding with apples

Apples are peeled and stalks. 2 apples are cut into slices, the rest are grated. Preheat the oven to 180 ° C. Beat the egg whites and yolks separately.


Put the milk in a pot, along with a little salt and half the sugar. Stir to dissolve the sugar. When the mixture boils, reduce the flame and add the rice, raisins, a piece of mace and cardamom pods. Boil the mixture slowly for 15 minutes, covering the pot with a lid, until the rice is tender and the milk has been absorbed.

Discard the piece of poppy seeds and cardamom pods, add vanilla sugar, mix and let the rice cool slightly, so that the temperature drops below 64 ° C, the temperature at which the egg yolk coagulates.

Mix the cooled rice with the beaten egg yolks, and then with the beaten egg whites.


Grated apples are fried in butter, with the rest of the sugar, cinnamon, raisins, lemon peel and half of the lemon juice. Squeeze into a sieve by pressing them with the bottom of a spoon. The liquid is collected in a bowl. Grated apples are set aside.

Add the apple slices to the pan, along with 1 tablespoon of sugar and the rest of the lemon juice. Heat until slightly caramelized. Add brandy, flambe and leave the flame until it goes out on its own. Remove the slices and place on a hot plate.

Put the liquid drained from the grated apples in the pan. Add the remaining 2 tablespoons of sugar and the rest of the lemon juice. Bring to the boil, stirring occasionally. Reduce the flame to a minimum and cook for 1-2 minutes, until it thickens a little and acquires a syrupy texture. Keep the caramel syrup warm.


Grease a pan with butter and sprinkle with breadcrumbs. Place half of the rice composition in the pan and level it carefully. Place the grated apples on top of the rice layer and spread them evenly.

Place the rest of the rice on top of them. Level and cover with caramelized apple slices. Sprinkle with a little syrup.

Put the tray in the oven for 25-30 minutes. Remove the pudding and let it cool (it is safest to refrigerate for about 1 hour). It is demoulded with an elastic silicone spatula, overturned on a large, flat plate; immediately turn over once more, on a plate, to reach the apple side up. Portion and serve sprinkled with the rest of the caramel syrup.

Rice pudding was one of my favorite desserts as a child. I can say that I was left with a nostalgia for him. And I prepare it quite often even now, at maturity! Sometimes I add compote fruit, other times jam made by me, other times even chocolate.

This time I made a much denser milk rice so I could turn it into pudding. From here until the final result I was not long! As you can see, I prepared and served it in individual ceramic forms. But you can also use a larger tray, like the one for tarts, if you want. Or you don't have some of these little ones.

Ramekin shapes are also very suitable. Mine are ordinary ceramic pots, glazed on the inside. So nothing sticks inside, and after use it washes well.

We bought them full of yogurt during one of our holidays in Greece. I leave below one of these trips:

I haven't had a chance to do that yet, but I made a vegan pumpkin tart instead, a real hit! ingredients
500 ml of milk
250 g of rice
2 tablespoons caster sugar
1 tablespoon vanilla sugar
a pinch of salt
3 apples
2 eggs
a pinch of cinnamon powder

a teaspoon of freshly grated lemon
Method of preparation
We boil the milk and when it boils we add the rice that we washed in 2-3 waters. We also add a pinch of salt and cinnamon stick. When the rice has boiled, set it aside and let it cool to absorb the remaining milk.
Until the rice cools, rub the yolks with the caster sugar, vanilla sugar and cinnamon. Peel the apples and cut them into rounds.
Whisk the egg whites.
When the rice has cooled, mix it with the yolks.
Take a heat-resistant dish that we grease with butter and cover with apple slices. The remaining mixture is mixed with the rice and finally add the beaten egg whites and incorporate by mixing lightly.
Pour the composition into the bowl and put in the oven at 180 until browned.

Rice Pudding with Apples and Cinnamon or Raisins - 2 Delicious Recipes

Rice pudding, with apples or milk and raisins, is a wonderful dessert, enjoyed by both children and adults. It can be prepared very easily and quickly at home, and is a basically healthy recipe.

Rice Pudding with Apples and Cinnamon - 2 Delicious Recipes

• 1 cup of rice
• 4 cups of milk
• ½ kg mere
• 3-4 tablespoons of sugar
• butter
• cinnamon

After I have chosen it and washed it well, the rice is left to soak for a few minutes in boiling water. During this time, peel the apples, remove the seeds and cut them into slices. Grease a henna dish or other heat-resistant dish with butter. Add the rice, sugar, apples, cinnamon and then the milk. Put the dish in the oven until the rice is well cooked. The pudding should brown on top. It can be served hot or cold. Bananas can be used instead of apples.

• 1 cup of rice
• 4 cups of milk
• 4 eggs
• 30 g of raisins
• 4 tablespoons sugar
• 1 sachet of vanilla sugar
• 40 g of butter
• 1 tablespoon of cinnamon (vanilla, nutmeg, rum, or other flavor)
• 1 tablespoon breadcrumbs
• 1 pinch of salt

We choose and wash the rice in 2-3 cold waters. After draining, boil it with cold milk and vanilla sugar over low heat. Stir continuously so as not to stick to the bottom of the pot. When the rice grain is almost cooked, add the sugar and salt, and let it boil until the milk decreases and the rice grain is lightly crushed. Stir in the butter and turn off the heat.

We heat the oven. Grease a pan with a little butter, and sprinkle the breadcrumbs.

Beat the egg whites and after the rice has cooled, add the yolks and mix well until smooth. Add the raisins, and finally carefully incorporate the egg white foam.

We pour the composition thus prepared in the tray and put it in the oven for about 50 minutes.

After removing the pudding, leave it for 10 minutes, then turn it over on a plate. We powder it with cinnamon and serve it hot, or let it cool. It can be served with jam or dried fruit.
