Oriental fasting salad with avocado mayonnaise

We clean the potatoes, wash them well and boil them in water with a little salt. We boil them until the fork enters them, but they do not crumble, then we drain them and let them cool.

Cut the potatoes into semicircles and place them in a bowl. Add the half-rounded radishes, finely chopped green onions and olives.

For the mayonnaise, cut the avocado in half, remove the seeds, then remove the core with a spoon and put it in a bowl. Squeeze the lemon juice over the avocado and mash well with a fork or mixer, adding the oil. Add salt, pepper and mayonnaise over the ingredients and mix lightly.

Let the salad cool for 15 minutes, then we can serve it.
