  • 1 teaspoon Dijon mustard
  • 60ml extra-virgin olive oil
  • 120ml balsamic vinegar
  • 1 pinch ground black pepper
  • 1 avocado - stone removed, peeled and sliced
  • 2 small tomatoes, each cut into 8 wedges

  1. In a small bowl, whisk together the mustard, olive oil, balsamic vinegar and pepper. Arrange the slices of avocado and tomato alternately like the spokes of a wheel on one big serving platter, or individual plates. Drizzle lightly with the dressing, and serve immediately.

Very easy, delicious, and pretty too - you can be really creative with the presentation. The recipe makes WAY too much dressing though. I halve it, and there is still more than enough for 4 servings. Prior to preparation, make sure you let the tomatoes and avocado come to room temperature - the first time I made it, they were too cold, and the salad lacked flavor.-14 Jul 2005

This was good and certainly easy. I think next time I'd use less balsamic vinegar - maybe half balsamic, half regular or red wine vinegar. It was just too strong in the balsamic category.-12 Jul 2005
