Vegan Mary

Spring is the time when all the markets are full of all kinds of green leaves that urge us to detoxify and many healthy recipes to invigorate our body after a winter in which there were certainly excess food. So it's the perfect time for a refreshment, exercise and lots of green leaves.

Today I prepared a spinach tart, because I am still a fan of bakery products, but also spinach, so I tried to find a balanced combination between them. Behind this recipe is a short story whose problem I am sure many vegans have encountered.

Having a pretty busy schedule, I often fail to prepare healthy snacks that I can take with me anywhere. So, I end up buying pastries. Ever since I was not vegan, I have liked to indulge in a sheet of spinach, but this sheet always contained cheese. After adopting this lifestyle, I could not give up, unfortunately, the pastries. This is where my "frustration" began, because I couldn't find a leaflet that contained only spinach.

So, I decided to put the convenience aside and prepare a spinach snack at home. And what do you think? It came out much better and certainly much healthier than the ones in the trade. And as the account at home does not match the one at the fair, the spinach puff pastry turned into a delicious tart, because I wanted to cook the whole dish at home. Thus, I was able to take into account the quantity and quality of the ingredients used.

How to prepare spinach filling

In a deep bowl, mix eggs, cream cheese and sour cream or milk (depending on what you choose for your spinach tart). After mixing, add pesto, chopped green onions, grated cheese, spinach and spices: salt, pepper and nutmeg. Mix these ingredients very well until you get a homogeneous green puree.

Remove the dough from the oven, set the beans or rice aside and place the spinach puree over the dough. Bake the tart for another 30 minutes at a temperature of 180 degrees.

After your spinach tart is baked, divide it into triangular slices and serve hot or warm.

If you decide to put one of the tarts in the freezer, do it only after it has cooled completely. When you want to serve it, take it out of the freezer an hour before. Put the spinach tart in a tray lined with baking paper and bake for 20 minutes. The oven must be set at a temperature of 160 degrees.

Spinach tart is very easy to make and does not need very pretentious ingredients. So, increase your cooking and good appetite!
