Ingredients

  • 2 Cups packed cooked farfalle
  • 6 Tablespoons Greek yogurt
  • 1/2 avocado, peeled, pitted, and mashed
  • 1 Cup cherry tomatoes, quartered
  • 1/4 Cup sunflower seeds
  • 3 Ounces feta, crumbled

Directions

In a large bowl, mix together the pasta, Greek yogurt, and avocado. Next, add the tomatoes, sunflower seeds, and feta. Chill in the refrigerator for as long as desired. Serve and enjoy.

Chef Geoffrey Zakarian on his summer pasta salad recipe: 'I want to eat like this the rest of my life'

Chef Geoffrey Zakarian showcases his Mediterranean roots with this fresh pasta salad recipe which features premium tuna from his latest partner, Genova. The key to the recipe, he tells Yahoo Life, is the "magic pesto." The classic nutty sauce is known for its bright green color which Zakarian says is acheived by blanching (a technique involving boiling water, followed by ice water) the greens first. GEOFFREY ZAKARIAN: I am very excited to show you one delicious Genova yellowfin tuna pasta salad with arugula, pesto, and dates that will transport you to my favorite place in the world, the Mediterranean.

My mom was a great cook. So when I went to France in my early 20s, the French Mediterranean and South of France and Italy, all that food just resonated with me. It's the taste I remember from my childhood. Exercise is very important. But if you exercise and don't eat right, it's not going to matter. That's why I love to cook with these ingredients, and I love to incorporate all my meals. Almost all of them are Mediterranean in style and brand.

So basically, what I'm going to do is, we're going to make the arugula pesto. If you want to keep it extra green, you have to blanch it in very salted water, boiling. I'm going to drop it in. You're going to count to 10. Put it in ice water, and put it in a food prep machine. Then I'm going to add the basics of pesto, which are pine nuts, a nice, sharp cheese, a little bit of lemon zest, a touch of butter, a clove of garlic, and then a very generous [? mock ?] of olive oil.

We're just going to pulse this up. When it's finished, what it's going to look like is this. And I want you to take a look at how beautifully green that is. That is what a pesto is supposed to look like. So pasta, any kind of pasta. I love using this whole wheat pasta right here, [INAUDIBLE] orecchiette, "little ears." Basically, that's what it means.

And to that, I'm going to add my beautiful albacore tuna. I partnered with an incredible company, Genova Premium Tuna, to offer food lovers a complimentary meal kit, featuring my recipe, some olives, sun-dried tomatoes here in their oil, dried slivered dates, and some dried parsley and dried dill.

Then, that magic pesto. Be generous with the pesto. Really important. And we are just going to toss this. Look how delicious this looks. Fresh, simple, great ingredients. Great protein, like Genova Premium Tuna. This is how I want to eat the rest of my life.

Prepare Summer Pasta Salad as directed, except substitute 1 1/2 cups fresh broccoli florets and 1 1/2 cups cauliflower florets for the green beans and summer squash. Recipe Summary

  • Coarse salt and ground pepper
  • 1/2 pound short pasta, such as fusilli
  • 1 medium yellow squash, thinly sliced crosswise
  • 1/3 cup roughly chopped pitted Kalamata or Nicoise olives
  • 4 lightly packed cups baby spinach (3 1/4 ounces)
  • 1 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 pound large shrimp, peeled and deveined

In a large pot of boiling salted water, cook pasta according to package instructions. Drain pasta, transfer to a large bowl, and toss with squash, olives, spinach, lemon zest and juice, and 1 tablespoon plus 1 teaspoon of the oil. Season with salt and pepper.

In a large skillet, heat remaining 2 teaspoons oil over medium-high. Add shrimp and cook, stirring occasionally, until opaque throughout, about 3 minutes. Season with salt and pepper. Top pasta with shrimp.


How to Make Ina Garten's Summer Pasta Salad

This recipe is one of those 5 ingredients or less kind and comes together quickly. Now &mdash her original recipe calls for marinating the tomatoes for 4 hours in olive oil, basil, and garlic sauce &mdash but I do not have 4 hours to wait for a pasta dish.

I wanted this and wanted it now. So we skipped the 4 hour wait period and it was still heavenly.

Start by adding to a bowl halved cherry tomatoes. Follow this with minced garlic, julienned basil leaves, and good olive oil, salt, and pepper.

Cook your pasta according to the package directions. We used angel hair pasta because it cooks so quickly, but you could use any pasta you wanted to really.

Then, when the pasta is done cooking, toss it with your sauce and then top your pasta with Parmesan Cheese and more basil for the most delicious and perfect pasta dish you will ever put in your mouth.

The possibilities are endless here. You could add in chicken or shrimp, more veggies if you like &mdash whatever you want. Oh &mdash and the best part? This pasta tastes even better the next day &mdash straight from the fridge. It is a very light dish and tastes just as good cold as it does warm.
