This summer is just sweltering. I still have to eat, so I am happy that the replacement blender for the one I recently broke arrived on my doorstep a few days ago — I can get back to making smoothies! A thick yogurt-based, fruit-sweetened shake is one of my favorite summer breakfasts, or post-exercise energy foods. While store-bought and chain-restaurant smoothies can have eight-bazillion hidden calories and a ton of sugar, it’s easy to keep your smoothies healthy when you make them at home. I tend to just dump a bunch of ingredients (yogurt, frozen banana and other fruit, peanut butter) in the blender and see what happens, but if you’re counting calories — or care about consistent results — measure the ingredients in the healthy smoothie recipes below:

Energy Shake
Kale is the secret, super-nutritious ingredient in this luscious and green smoothie. You don’t need a juicer to make this sweet, smooth drink, which is rich in vitamins A and C—a blender can puree the fibrous kale and s oft kiwi and banana.

  • 1 1/2 cups fresh orange juice

About the Recipe

Smoothie making is pretty simple so we won’t drone on about the intricacies, of which there are few.

I used fresh peaches for this recipe because they’re perfectly ripe and sweetened by the end of summer season. If you choose to use frozen peaches, please do! Simply use 1/2 cup ice instead of the full amount.

I used Almond Breeze AlmondMilk Original for this recipe. It’s naturally sweetened and gives the smoothie its sippable thickness and makes this smoothie soy and lactose free.

Honey sweetens the smoothie pot. Add more or less depending on your peaches. Almond extract gives this drink it’s peach pie flavor. It’s really one of my favorite parts of the drink.

While I didn’t include it in this recipe, if you want to up your fiber, add 1/3 cup of old fashioned oats to the blender mix and give it a whirl. The kids will slurp it up like no tomorrow. And so will you.

Summer fruit is my favorite, and I think my absolute favorite of all the summer fruits are peaches.

I absolutely love peaches and usually as soon as they become available during the early season I start buying them like crazy. Annnnnd then I start throwing them out like crazy.

Peaches, as much as I love them, can be a huge pain that way. One day they're perfectly ripe, full of juicy flavor, and the very next day they're a squishy mess. It's always a bummer.

This year I found a solution though: once they start to go (you know, like twelve hours after I buy them), I chop my peaches up and stick them into freezer bags for later.

Now, I'm not going to thaw them out and dig right in like I might with a perfectly ripe peach, but they're great for stuff like chia jam, roasting, sautéing, and smoothies!

That's exactly how this smoothie bowl was born. When your peaches are frozen and blended up with a bunch of other ingredients, it's really hard to tell that they're maybe past their prime.

In fact, because they've already reached maximum ripeness, and therefore maximum sweetness, it can even work out better.

The cream part of this peaches and cream smoothie bowl is coconut milk. It adds an amazing richness that makes the smoothie taste like a big bowl of ice cream.

I used light, but for a seriously creamy smoothie, feel free to use full-fat. And if you'd rather avoid the fat and slash the calories a bit, feel free to swap it out with your favorite non-dairy milk, like almond or soy.

You can of course play around with the toppings too. I love the combination of peaches, raspberries, and almonds, so that's what inspired my choice of toppings, but coconut, hemp seeds, and crunchy granola would all be delicious on this bowl.


If you don’t have a great blender, I’ve found that greens can become a texture issue in smoothies. If this is a problem for you, there is a solution that doesn’t require breaking the bank!

Instead of adding all the ingredients into the blender, add just your greens and your liquid. Blend this well until all the greens are nicely mixed in, then add the mango and peach slices. This helps incorporate all the ingredients and turn it into a silkier, luscious drink!


Here's the simplest formula you can use to make a tasty afternoon snack smoothie for less than 200 calories. After you memorize the basics, you can use the formula to create your own different flavor creations — use the fruit of your choice, whichever low-fat milk you prefer and the add-ins you like best, whether it's chia seeds, cocoa powder or even spinach (seriously! You can add a handful of baby spinach leaves to any smoothie without decreasing the deliciousness). And be sure to check out the four recipes below for slurping inspiration.

Start with 1 to 1½ cups of fruit

Feel free to use fresh or frozen: Think sliced strawberries, raspberries, mango chunks, pineapple cubes, peach slices — whatever fruit you like best. When it comes to bananas, count 1/2 banana as 1/2 cup.

Add 1/2 to 3/4 cup milk.

User's choice when it comes to the type of milk. But if you're looking to keep calories low, the best bests include skim or one percent cow's milk, unsweetened almond milk (plain, vanilla or chocolate), unsweetened soy milk, or lite coconut milk. Start with 1/2 cup depending on the fruit you choose and additional mix-ins, you may need to bump it up to 3/4 cup.

Be picky with add-ins.

Although fruit and milk blend up deliciously on their own, here's where you can elevate the flavor and nutrition. However, be mindful of amounts. In general, 1 teaspoon of nut butter or mini chocolate chips or 1 to 2 teaspoons shredded coconut, chia seeds or cocoa powder work well. If you want to add low-fat Greek yogurt or canned pumpkin, stick to about 1/4 cup. Also, know that a handful of spinach will change the color but will go undetected when it comes to taste (I promise!), which is a nice nutritional bonus.

Ingredients

  • 1 1/2 cups almond milk (or your favorite dairy free milk)
  • 1/4 cup dried, pitted dates
  • 1/4 cup gluten free oats
  • 1/4 cup cashews
  • 3 fresh peaches (or 1 1/2 cups frozen)
  • 1 cup chopped / riced fresh or frozen cauliflower
  • scrape 1 vanilla bean or 2 teaspoons pure vanilla extract
  • 2 teaspoons maca root powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon Himalayan salt

Instructions

  1. In the jar of a high powered blender, combine almond milk, dates, oats, and cashews. Blend at highest speed until completely smooth.
