  • 1/2 lemon, juiced
  • 1 shallot, peeled and chopped
  • 2 avocados, ripe, peeled, stone removed and diced
  • 2 large garlic cloves, peeled
  • a few coriander leaves
  • salt and pepper to taste

  1. Transfer all the ingredients except 2 or 3 coriander leaves into a herb mill or liquidiser. Mix until smooth and creamy.
  2. Season with salt and pepper. Pour into a serving bowl and garnish with coriander leaves. Cover with a cling film until ready to serve. Serve chilled as a dip with tortilla chips.

  • 1 small yellow onion, roughly chopped
  • 1 serrano chili, roughly chopped
  • 1/2 cup picked cilantro leaves, finely chopped, divided
  • 2 teaspoons kosher salt
  • 4 ripe avocados
  • 2 tablespoons juice from 2 limes

Place onion, chili, half of cilantro leaves, and salt in a mortar and pestle. Pound into a fine paste. Alternatively, combine onion, chili, half of cilantro, salt, and half of lime juice in a food processor or blender and process until smooth paste is formed, scraping down sides as necessary.

Split each avocado in half, discard pits, and spoon out flesh into a medium bowl. Roughly mash with a stiff whisk. Add onion/chili puree, remaining cilantro leaves, and half of lime juice (if using mortar and pestle method). Fold to combine. Season to taste with more salt and lime juice. Serve immediately with warm tortilla chips.

The Best Guacamole Recipe

Guacamole is my favorite dip ever! I love the simplicity of it. You have to use the freshest ingredients to ensure that the taste is right. I learned the process from a local restaurant and I wanted to share it with my Cookies.

To stay as authentic as possible, I use a molcajete for this recipe. It’s a mortar and pestle. This renders the most flavor into your guacamole. It’s the absolute best tool to use to grind up spices and ingredients. I highly recommend incorporating this into your kitchen equipment.

When choosing avocados for your guacamole, make sure that it’s ripe. Give a gentle squeeze. If it gives a bit, it’s ready to use. Ripe avocados have a creamy flesh which are delightful in this recipe.

I prefer a chunky textured guacamole. So, I use the pestle to mash the avocados instead of grinding it up into a paste. But, the consistency is totally up to you. Make it as chunky or as creamy as you desire.

Watery guacamole is a huge no-no! Be sure to seed and pat the tomatoes dry before dicing and adding them to the mix. Be sure to check out my method in the tutorial.

Superbowl Special: Touchdown Guacamole

So, as I&rsquom sure most of you know, this weekend is one of the biggest weekends of the NFL. It is Superbowl Weekend. This year it is special, not because my favorite team made it to the Superbowl. (they did not) But it is special because it will be two brothers going head to head, John Harbaugh of the St. Louis Rams vs. Jim Harbaugh of the San Francisco 49ers. Usually this weekend is known for Football, friends, funny commercials (although I will say that the last couple of years have been a let down), and amazing food to snack on.

If you are planning your Superbowl Party or attending one and need to think of something to bring, I&rsquove got the perfect appetizer for you. This one is always a hit and usually gone within the first 45 minutes of contact with the table. It is my Touchdown Guacamole!

This Touchdown Guacamole isn&rsquot just any old guacamole, I have worked on perfecting it over the years and after a trip to San Antonio and a visit to Boudro&rsquos Texas Bistro and I have found the secret ingredient. What for it&hellip. it&rsquos fresh squeezed orange juice.

To get started, Chop up all your ingredients: tomatoes, red onion, garlic, jalapeño, chipotle pepper, and cilantro.

Cut, deseed, and mash up your avocado.

Mix avocado, tomatoes, red onion, garlic, jalapeño, chipotle pepper, cilantro, orange juice, lime juice, salt and pepper. Serve.

The Ultimate Guacamole

2 ripe avocados, peeled and pitted 1 medium lime, juiced 1/4 cup red onion, finely chopped 2 tablespoons cilantro, finely chopped 1 teaspoon kosher salt 1/2 teaspoon black pepper 1 tablespoon jalepeno pepper, finely chopped 1. Place avocados and lime in medium bowl, and lightly mash with fork. Stir in remaining ingredients.



  • 2 avocados (ripe)
  • 1 small onion finely diced
  • 1 Roma tomatoes diced
  • 3 tbsp finely chopped fresh cilantro
  • 1 jalapeno pepper seeded and finely diced
  • 2 garlic cloves minced
  • 1 lime juiced
  • 1/2 tsp salt

3 ripe Hass avocados (if you use bigger ones, use fewer)
Some ripe good tomatoes 4-5 roma, or fewer if bigger, chopped into about 1/2" cubes
A couple of cloves of garlic, minced
1 medium or a couple of small onions, diced
A handful of cilantro and or parsely, chopped
Good olive oil
fresh squeezed lime juice (from 1 or two limes)
salt & pepper

I like my guac chunky, so I don't mash the avocado. Instead, I cut them in half and remove the pit. Then, while the avocado flesh is still in the skin, I make parallel cuts in it in one direction, then in the other, so I basically cut a fine checkerboard into the avocado half. Then I scoop the flesh out with a spoon, and it comes out in little pieces.

I add the tomato, onion, cilantro, and garlic and mix. Then add a litte olive oil (just a tablespoon or two), then lime juice, salt and pepper to taste. Mix well. The avocado pieces start to break down a little, making a creamy coating for everything, but still stay chunky.
