Papanas preparation recipe

700 g of fresh cottage cheese
1 teaspoon natural vanilla essence

For starters, drain the cottage cheese in a sieve. Leave it like this for about 2-3 hours (or overnight) in the fridge, then mix the cheese with the powdered sugar and the vanilla sugar, the vanilla essence and the lemon peel, then add the eggs and mix until the composition is homogenous. Then add the flour and baking soda. Stir until the dough is smooth.
We moisten our hands with water, and shape balls that we flatten a little. In the middle we make a hole with a finger and then we give them a little through the flour (if we have flour on the work table it is perfect). We do this until we finish the dough, it should come out about 20 pieces with a diameter of 6 cm or 10 bigger pieces and balls exactly how many papanasi we model. Put the oil in a pan and heat it. Fry the papanas on both sides, over low-medium heat, until golden brown.
We serve them with sour cream and jam (the cherry one is my favorite).
