There are busy days when we only have an hour to cook and eat. On such a day I also cooked these pasta with chicken breast, arugula, tomatoes and garlic. I used short pasta (penne) but you can also use other models such as farfalle, rigatoni, snails, fusilli or even tagliatelle or macaroni.

With this recipe we can sit at the table in 20 minutes. Until the pasta is cooked, the other ingredients are ready, just like in the pasta recipe with ham and cream sauce (the recipe here), chicken breast with marinara sauce (the recipe here) or pasta with mushrooms and cream sauce (the recipe here).

As I enter the kitchen the first thing is to boil a pot of water. I calculate about 1 l of water per 100 g of pasta and approx. 90-100 g of pasta per person - because this sauce is not very consistent. For "more serious" sauces (gen ragu alla bolognese or carbonara) calculate 80-90 g of dry pasta / person.

Instead of chicken breast you can choose boneless thighs or turkey breast. If you do not like arugula you can use tender baby spinach leaves or other salad of your choice (valerianella for example). I leave you with the recipe for two portions of pasta with chicken breast, arugula, tomatoes and garlic.


Prepare the chicken breast in tomato sauce. We cut the meat into small cubes that we season with salt and pepper and let them rest for 20 minutes, stirring them from time to time to season well. Heat the oil and brown the chicken breast pieces in it, and at the end, add a tablespoon of melted butter to give the meat creaminess. Transfer the meat to another bowl and keep it warm, covered.

Add to the remaining fat in the pan, first the onion and 2 cloves of finely chopped garlic. Mix them well until they change color, then add the grated carrot and finely chopped pepper. Again, mix the ingredients well. We add 2-3 tablespoons of water to speed up their penetration, but also to prevent them from burning. When all the ingredients are well penetrated, add the tomato juice and the tomato paste.

Let the sauce boil for 5-6 minutes, during which time season it. Add basil, oregano, a little grated ginger and a clove of grated garlic. Then add the chicken breast pieces and boil them together for a few more minutes, to intertwine the tastes.

We prepare wholemeal pasta. Bring water to a boil with salt, just like for classic pasta. When it starts to boil, add the wholemeal pasta and cook for 10-12 minutes. Add a tablespoon of melted butter for creaminess. Drain the wholemeal pasta and add them to the tomato sauce with chicken breast. Add a little more water, mix well and sprinkle with grated parnesan.


Here's how to do it:

1. Boil the pasta in salted water for 10-15 minutes, depending on the time recommended by the manufacturer.

2. Drain and rinse with warm water.

INGREDIENTS (for 3 servings)
3 pieces chicken breast (boneless and skinless)
300 gr. light mozzarella
600 gr. cube of tomato pulp
1 handful of fresh basil
4-5 cloves of garlic
Spices (I made a mix of): salt, pepper, paprika, granulated garlic, chili flakes, oregano (use whatever spices you prefer)
2 tablespoons olive oil

PREPARATION
Put the chicken breast pieces in a bowl and sprinkle with a tablespoon of olive oil, then season with the spice mix mentioned above. Mix well, then cover the bowl with cling film and put it in the fridge for 30 minutes - 1 hour, to marinate the chicken.

Grease a pan with a little olive oil, then add the chicken breast pieces to it. Put the tray in the preheated oven at 180 ° C for 35-40 minutes or until the chicken is almost cooked. Halfway through, he turns the chicken from side to side.

Meanwhile, prepare the tomato sauce.

Clean and crush 4 cloves of garlic, then fry them in a pan for about 2 minutes on low heat. Add the tomato pulp to the pan, season with salt and pepper to taste, then reduce the sauce to low heat for 3-5 minutes. Finally add a tablespoon of freshly chopped basil, stir, then set the pan aside.

After 35-40 minutes in the oven, the chicken should be cooked. Remove the pan, place the chicken breast on a plate, then add the tomato sauce to the pan. Keep 3 tablespoons of sauce aside.

Put the pieces of chicken breast in the pan over the sauce, over the chicken add a tablespoon of the preserved sauce, then 3 slices of mozzarella over each piece of chicken covered with sauce.

Put the tray back in the oven for 10 minutes or until the mozzarella is melted.

Serve hot with your favorite garnish.

We served it with a mashed potato, over which we put some pan-fried pine seeds and basil leaves. Pine seeds are optional, you can garnish the puree with anything else you want.

Method of preparation

  3. Put the vegetables in a hot pan with a little olive oil and 1 strand of basil. Let the sauce cook for 15 minutes or until thickened.
